Jewish Apple Cake

Ingredients
  • 8 teaspoons Sugar
  • 4 teaspoons Cinnamon
  • 6 or more Apples, sliced
  • 4 Eggs
  • 2 C. Sugar
  • 1 C. Oil (and a bit more)
  • 3 C. Sifted Flour
  • 3 teaspoons Baking Powder
  • ½ teaspoon Salt
  • ½ C. Orange Juice
  • 2½ teaspoons Vanilla
Instructions
  • Grease and flour a 9-inch tube pan.
  • Mix together the 8 teaspoons of Sugar and the Cinnamon and set it aside.
  • Slice the apples.
  • Beat eggs well.
  • Gradually beat in the 2 C. Sugar.
  • Add oil.
  • In a separate bowl, add the sifted flour, baking powder and salt. Mix together.
  • Add the sifted dry ingredients a little at a time to the liquid mixture…alternating with the orange juice.
  • Beat in the vanilla.
  • Pour about ¼ of the mixture in the pan. Layer with the apples and sprinkle the layer with the cinnamon/sugar mixture.
  • Repeat layers, making sure that the last layer is batter.
  • Bake at 350 degrees for one hour…and maybe a little longer.
