- 1 large head of cabbage
- 3 medium size green peppers
- 1 bunch of celery stalks
- 1 teaspoon of salt
- 1 ½ Cups of Sugar
- ½ Cup of Vinegar
- 1 ½ Cups of Water
Directions:
- Clean and cut up pieces of the cabbage and grate the cabbage in a food processor.
- Clean the celery and grate it in a food processor.
- Clean the green peppers and grate them in the food processor.
- Put all the grated vegetables in an extra large mixing bowl.
- Sprinkle a teaspoon of salt on the vegetables.
- Pour the measured sugar over the vegetables.
- Measure the vinegar in a large measuring cup. Then add the water to the vinegar. (Note: I promised myself not to dilute the vinegar so much.)
- Pour the vinegar mixture over the vegetables.
- Squeeze the ingredients by hand for about 2 minutes.Refrigerate overnight.
(Makes about 3 Quarts)
