Pumpkin Cookies

Combine in a large mixing bowl:


  • 3 Cups of Canned Pumpkin
  • 2 Cups of Sugar
  • 1 Cup Butter or Margarine
  • 2 teaspoons of Vanilla

Add and mix together:

  • 4 Cups of Flour
  • 2 teaspoons of Baking Powder
  • 2 teaspoons of Baking Soda
  • 2 teaspoons of Cinnamon
  • 1 12-ounce package of Butterscotch Morsels
  • ½ teaspoon of Ground Cloves
  • 2 Cups Walnuts (chopped fine)….[optional]

Drop on a greased cookie sheet.  Bake at 375 degrees F. for 12-15 minutes.  Move from cookie sheet to wax paper to cool.   Frost with your favorite icing.  Or use the following which is very good:

Frosting for Pumpkin Cookies (or a cake, for that matter):

Cream together for a good amount of time:

  • 1 Cup Granulated Sugar
  • 1 Cup Butter

Add ¾ Cup lukewarm Milk a little at a time and beat it up a lot after each addition.  (Note:  I usually put the measured milk in the microwave for about 30 seconds).  When the mixture is silky, add 1 teaspoon of Vanilla.  Yummy!
