“Night Before Christmas” Coffee Cake

Ingredients:

  • ½ C. Sugar
  • ¼ C. Butter
  • 2 Eggs, beaten
  • ½ C. warm Milk
  • 1 package Yeast (2 teaspoons bulk yeast) dissolved in 3 Tablespoons warm water
  • 3 C. Flour
  • 1 teaspoon Salt
  • ½ teaspoon Vanilla

Topping Ingredients:

  • 2/3 C. Sugar
  • 1 Tablespoon Cinnamon
  • 4 Tablespoons Butter, melted
  • ½ C. Walnuts, chopped fine

Directions:

  • Cream together the sugar and butter.
  • Then add eggs, milk, 1 package of yeast dissolved in 3 tablespoons of warm water, flour, salt and vanilla.
  • Beat all of these ingredients together. Then set it aside and let it rise, until it is double in size (it may take two or more hours).
  • Mix the topping ingredients (sugar, cinnamon, melted butter and walnuts) together for later.
  • When the dough has doubled in size, put it in a 9 x 13” greased cake pan.
  • Spread the topping on the dough.
  • Place the pan in a cold oven and leave it there overnight to rise.
  • The next morning, turn the oven to 350 degrees and bake for ½ hour.
  • Take out and serve warm.
