Ingredients:
- 1 C. Oats
- 1½ C. Boiling Water
- (Pour the boiling water over the oats, stir, and let the mixture cool. )
- 1 C. light brown Sugar
- 1 C. granulated Sugar
- ½ C. Butter
- 1 teaspoon Vanilla
- 2 Eggs
- (After measuring the sugars, butter, vanilla and eggs, mix them together; then add the cooled oats mixture and mix again.)
- 1 1/3 C. sifted cake Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Cinnamon
- ¼ teaspoon Salt
- (Sift the flour, baking soda, cinnamon and salt together. Then, add this dry mixture to the wet batter and mix thoroughly. )
Directions:
- Pour the cake batter into a greased and floured 9x13” cake pan.
- Bake for 40 minutes at 375 degrees.
The Icing
- 6 Tablespoons Butter
- 1 C. light brown Sugar
- 5 Tablespoons Canned Cream (evaporated milk?)
- 1 can (about 8 oz.) Baker’s Coconut
Brown under broiler (leaving oven door open); watch carefully for brownes
