Pineapple Upside Down Cake

Ingredients:
  • ½ C. Butter
  • 1 C. Sugar
  • 2 Eggs, well beaten
  • 2 C. Flour
  • 2 teaspoons Baking Powder
  • ¼ teaspoon Salt
  • 1 (20 oz.) can of Pineapple Slices (reserve the juice)
  • ¾ C. Juice (from the can of Pineapple Slices)
Directions:
  • Melt 4 Tablespoons of Butter and 1 C. Brown Sugar in a 9-inch baking pan on top of the stove.
  • When the brown sugar is melted in the butter, remove from the heat and arrange pineapple slices decoratively on top of the butter/brown sugar mixture.
  • Add maraschino cherries.
  • In a large mixing bowl, cream the butter and sugar.
  • Add the eggs and mix together.
  • Add the dry ingredients alternately with the juice from the can of pineapple slices.
  • Pour the batter over the pineapple slices/cherries in the baking pan.
  • Bake at 350 degrees for about 50 minutes.
