Ingredients:
- ½ C. Butter
- 1 C. Sugar
- 2 Eggs, well beaten
- 2 C. Flour
- 2 teaspoons Baking Powder
- ¼ teaspoon Salt
- 1 (20 oz.) can of Pineapple Slices (reserve the juice)
- ¾ C. Juice (from the can of Pineapple Slices)
Directions:
- Melt 4 Tablespoons of Butter and 1 C. Brown Sugar in a 9-inch baking pan on top of the stove.
- When the brown sugar is melted in the butter, remove from the heat and arrange pineapple slices decoratively on top of the butter/brown sugar mixture.
- Add maraschino cherries.
- In a large mixing bowl, cream the butter and sugar.
- Add the eggs and mix together.
- Add the dry ingredients alternately with the juice from the can of pineapple slices.
- Pour the batter over the pineapple slices/cherries in the baking pan.
- Bake at 350 degrees for about 50 minutes.
