Mom's Chicken



  • Just rinse the pieces.  Trim any unwanted, visible "fat" from each piece. 
  • Melt a little butter over low heat...maybe a half of a stick in a good frying pan (uncovered) that has a lid. 
  • Lay the chicken pieces in a single layer in the frying pan, and add about 1/4 cup of water to the pan. Add salt and pepper to each piece...to your taste. 
  • Cover the pan. Turn the heat to medium. 
  • Check the chicken every 5 minutes, using a fork to turn each piece over. It should be thoroughly cooked/fried in about 30 minutes (maybe sooner...if your heat is higher). 
  • NOTE: After about 20 minutes, if the chicken has not "browned" at all, take the lid off the frying pan...but watch the chicken more closely then...so it won't burn.
